I’ve been eating Waldorf salads since I was a child. My mother loved them. However, she always used mayo.
Your recipe is a lovely, light change of pace. Good work! And your photos are wonderful..they make the salad look so crisp and fresh!

When I was a young girl scout I would claim I was allergic to Waldorf Salad specifically because I hated mayo. And even though I like mayo now in the right dish, this version of the classic salad seems much more appealing! I need to use up some apples too…
