Almond Pecan Walnut Pancakes with Skillet Browned Honeycrisp Apple Topping

These wholesome pancakes are made with Sturdiwheat pancake batter, packed with whole grain nutrients.
Ingredients
  • Pancake Ingredients
  • 1 cup pancake mix
  • ½ c. 0% Greek Yogurt
  • ½ c. water
  • Apple Topping Ingredients
  • 2 cups diced apples, peelings on
  • 1 T unsalted butter
  • 2 T brown sugar
  • ½ tsp. cinnamon
Instructions
  1. Combine the pancake mix, yogurt, and water in a medium bowl and mix just until moistened.
  2. Spray a skillet lightly with oil and heat over medium.
  3. When ready, dollop a large tablespoon full of batter into the pan and spread a bit. Make three small pancakes.
  4. Allow to cook until a peek with a spatula under one of the pancakes shows a golden brown, then carefully flip.
  5. Cook until the other side is also a golden brown before removing to a warm platter and cooking a second batch.
  6. While the pancakes are cooking, prepare the apples by melting the butter in a skillet over medium heat.
  7. Add the apples, brown sugar, and cinnamon and stir occasionally to mix everything.
  8. Allow to cook until the apples begin to soften and very slightly brown.
  9. Pour a good sized tablespoon of apples over one pancake and top with a second. Pour another spoon of apples over the top.
